Designed as a modern Victorian house, Betula (Latin name for the birch tree species) is the latest collaboration between French chef Laurent Cantineaux and Venezuelan architect and restaurateur Juan Carlos Perez Febres, co-owners of Bonito Saint Barth (French west indies). After falling in love with Aspen a few years ago, they saw no alternative but to translate the island vibes to the alpine scene, and so Betula Aspen was born.

Welcoming chic interior with homey feel and live DJ spinning nighty tunes. Outside patio overlooking Ajax Mountain for the warmer days.

Betula’s original craft cocktail list is the perfect complement to the cozy lounge and 12 bar seats. Interesting ingredients and an innovative approach to mixology make for an experience that begins before the first sip.

Cuisine

French Pan-American cuisine, with an authentic rotissoire as center piece of the kitchen. Chef Laurent Cantineaux, Daniel Boulud protege, uses French techniques accentuated by Latin American flavors & Local Colorado Ingredients. Betula’s dishes juxtapose flavor and texture with a simple yet elegant presentation.
