Pronounced "Nine" with a 9 this Aspen steakhouse from Scott Degraff puts the test kitchen of the FunWorldwide Lab, (F.K.A. Cooking School of Aspen) into production. This Aspen restaurant has two sides serving some favorites from N9NE Steakhouses at night and food from Junk during the day.

We found N9NE tucked in an ally and were so happy we did. My wife and I were greated with genuine hospitality and got to sit at the Chef's table. Chef Chris was friendly and engaging. It was amazing to watch he and his team work with precision and care on each dish. N9NE had a very friendly feel like you just belonged and we were treated like true guests in someone's home. Chef Chris uses only local and fresh ingredients from the Aspen area. His menu is inspired by the flavors of the region and they are executed well. I enjoyed the Kobe burger and beer from the local brew house, while my wife had the special for the week which included seared scallops next to a tomato & bread salad. Our overall experience was excellent. It was a little tricky to find and we were lucky to be there on a week night so it was not crowded.

Not even close to the N9NE in Vegas. Maybe they haven't worked out the kinks yet, but i'd say it needs improvement.

We enjoyed dinner at N9NE during the Aspen Food & Wine Classic and had a wonderful experience. We sat in front of the beautiful demonstration kitchen, and watched Chef Chris Conlon work his magic. We both ordered the Bone-In Ribeye, which is supposed to also be available at DeGraff's new Junk at the Red Onion later this summer, and it is an impressive cut of beef, with dry-aged flavor to match. We paired the beef with Brussel Sprouts - which come with Applewood Smoked Bacon, and the Brussel Sprouts. Sides were huge, and we were easily able to split them with plenty leftover.

Service was outstanding, never pushy and always attentive.

Would definitely recommend N9NE to others. Steak lovers rejoice - the beef menu at N9NE is unmatched in town, and all cuts are USDA prime dry-aged.
