Park90 + Chef Tom Coohill

Located inside the The St. Regis Aspen Resort, the newest concept presents a collaboration between husband-and-wife team Tom and Diane Coohill of Denver’s celebrated Coohills Restaurant in the hip LoDo neighborhood and the acclaimed Park90 wine bar at the Regent Singapore.   Featuring Executive Chef Tom Coohill’s French-influenced fare and a wine list curated with rare and allocated wines rated highly by wine critics, the seasonal take-over will highlight the best of Denver’s booming culinary scene with world class wines to complement. Chef Coohill’s culinary influence comes from his years of training at three-star Michelin L’Oustau de Baumanière in Baux-de-Provence. He honed his Lyonnaise style during his time cooking under famed French Chef Jean Banchet at Le Francais in Chicago.  Lyonnaise techniques emphasize simplicity to create quality, and Coohills delivers his interpretation by way of shared boards, tasting menus, a selection of house-made pâtés, sausages, seafood terrines, breads and crackers all comprised of local Colorado ingredients. 

The new concept, and redesigned space will officially open on Friday, June 14th with service Tuesday - Sunday and several menu offerings  including a happy hour menu served on the patio as well as in the lounge - from 4:30 p.m. - 6 p.m. - a tasting menu available throughout the restaurant with customizable options, as well as a full dinner menu served from 5:30 p.m. to 9:30 p.m. A bar menu will also be available throughout the evening at the bar, in the lounge and on the patio. Mondays and daytime hours the restaurant will open for private events only carrying forward the Coohill reputation as “the unparalleled party place.”
