Sant Ambroeus Aspen Restaurant opened early 2025 on Main Street at the former Main St. Bakery location. 

"Culinary Director lacopo Falai focused his menu on elegant Milanese style cuisine as influenced by and built from the bounty of surrounding fresh Rocky Mountain rivers and farms. A raw bar is also featured. 

Combining the warmth of an Alpine chalet with the modern aesthetic of Milan, our Aspen compound takes inspiration from the city itself, providing protection, sustenance, and conviviality. Designed by Giampiero Tagliaferri Studio, the Restaurant is located in one of downtown's most historic buildings, dating back to 1889. Inside, sophisticated ease rules: elements native to the environment juxtapose several vintage Italian pieces, and plush banquets and chairs flank a central fireplace that gives a nod to the brick and stucco building's original era.

Next door in a new wooden cabin that complements the area's Victorian structures, the intimate furnishings of ll Baretto's bar and lounge wrap around a stone hearth topped by a green steel flue. The bar opens to an outdoor dining terrace and sidewalk leading back to the Restaurant."
