The Austrian owner has poured her heart and soul into creating an atmosphere best described in one German word: gemütlich. The carefully chosen artifacts and candlelight combine to make this the perfect place for a romantic rendezvous, intimate rehearsal dinner or wedding party. According to the owner, Karin Derly, "we envisioned this as a place for people to create happy, lasting memories." Many satisfied customers from around the world agree that the French Alpine Bistro is a charming hideaway, surrounded by the Rocky Mountains, for lovers and friends to share an intimate meal.
The famous feature is the cheese fondue - Gruyère, Vacherin, Beaufort and Comté cheeses, elevated with a lash of white wine and a touch of Kirschwasser. A clutch of classics follows on, from tangy onion soup gratinée with Gruyère to truffle potato gnocchi seasoned with smoked bacon, cream, caramelized onions and Gruyère. Magic is made with closer-to-home classics too: indulge in a burger of Colorado dry aged wagyu beef, a plate of Brittany crêpes served with jambon de Paris, melted Gruyère and Emmentaler, or perhaps the terrine of foie gras flavored with Sauternes, served with toasted brioche and lingonberry compote.
